One of my favorite recipes for a good hearty Chili.
1 Lb Venison
1 Lb Hamburger (80/20 ratio)
1 1/2 Lb Pork Sausage (Any spiced will do)
1/2 White Onion, Diced
2 Cloves of Garlic, Minced (2 Tbsp of pre Minced garlic will work)
15 Oz Can of Tomato Sauce
15 Oz Can of Stewed Tomatos
1 Bottle of Beer (I prefer a good hearty IPA, i.e. Sierra Nevada or Sierra Nevada Torpedo)
27 Oz Can of Chili Beans in Chili sauce
15 Oz Can of Kidney Beans, Drained and rinsed.
1 Pkg McCormick's Hot Chili Seasoning Mix
1 Tbsp of Crushed Red Pepper
Bring 2 Tbsp of Olive oil up to a medium heat. (Just starting to smoke)
Add your meat in chunks and brown well.
Add your diced onion and cook until translucent
One at a time, add the remaining ingredients in the order listed. Stirring as you add them.
Allow to simmer for 2 to 2 1/2 hours. If you like your chili more thin, just add water throughout the simmer process to achieve your desired consistency. Just don't add it at the end as it will not have a chance to fully absorb.
Ladle into a bowl. Sprinkle a good 4 cheese Mexican shredded cheese over the bowl. Place in your broiler over low heat until it is fully melted.
Fan out four slices of Avocado over the cheese and serve.
